Dampen a tea towel and place in a colander. Hang the colander in a bowl or pan. Pour in the yogurt and leave to drain in the refrigerator for about 8 hours.

Roast the almonds in a dry frying pan. Leave to cool on a plate.

Pour the yogurt into a bowl. Stir in the crème fraîche, honey, apple juice and cinnamon. Roll out oval bread with two spoons and put them on plates.

Spread the almond shavings over it and dust lightly with icing sugar.
