Dip of peas and goat cheese
A nice English recipe. The side dish contains the following ingredients: garden peas (freshly dipped (if they are not fresh then use frozen)), fresh goat cheese, ricotta, lemon (scrubbed), olive oil and crusty bread (or fresh vegetables such as carrots and radishes).

Put the peas in a mortar, or use a large bowl and a fork, and crush into a coarse puree. Add the goat cheese and the ricotta and mix everything together.

Grate the yellow skin of the lemon over the pea mixture and season to taste with salt and pepper. Add as much lemon juice until the mixture has the desired flavor and structure (a 1/2 lemon is good). Taste again to see if you want to add something.

Drizzle with a little oil and serve with tasty bread or crispy, fresh vegetables.
