Cut the duck breasts on the fat side diamond-shaped into the meat and rub them in with salt and pepper.

Fry them on the fat side in a hot frying pan for 7 minutes. Turn them over and bake the other side for 5 minutes. Take them out of the pan and keep them warm under aluminum foil.

Keep approximately 4 tablespoons of shortening in the pan and discard the rest. Add the balsamic vinegar, berry liqueur, thyme and salt and pepper and stir well.

Put the blueberries through. Crumble the cake or cut it into pieces.

Serve the duck breast with the sauce and garnish with the cake. Delicious with potato croquettes or mashed potatoes and red cabbage.
