Sprinkle the lemon juice over the avocado cubes.

Mix the mussels with the avocado, spring onions and some freshly ground pepper.

Brush the slices of bread with sour cream and sprinkle half of the cheese over it.

Put the lettuce on top and spread the mussel mixture over it.

Sprinkle the rest of the cheese over it, cut the bread diagonally and serve.
