Egg cakes with yogurt and fruit

Preheat the oven to 180ºC.

Beat the eggs with the sugar for at least 5 minutes with a mixer to a pale yellow mixture.

Add the lemon zest and strain the flour and the baking powder above it. Carefully pour everything with a spatula through the egg batter until everything is mixed well.

Put full tablespoons of the batter on the baking sheet and fry the cakes in the middle of the oven in about 10 minutes until golden brown. Allow to cool to lukewarm.

In the meantime, heat the fruit compote to lukewarm.

Serve the egg cakes with the fruit compote and yogurt.
