Egg curry with vadouvan
Curry of eggs, broccoli, coconut milk, cherry tomatoes, coriander, vadouvan with brown rice.

Bring a pot of water to the boil, add the rice and eggs and cook for 8 minutes.

Remove the eggs from the pan and scare under cold running water.

Drain the rice and leave with the lid on the pan for 5 minutes.

In the meantime cut the broccoli florets in four.

Heat the oil in a stirring stir-fry vadouvan ½ min.

Add the broccoli and stir-fry 1 min.

Add the coconut milk and bring to the boil. Cook over 5 minutes on medium heat.

Halve the tomatoes, add and heat for another 1 minute. Season with salt.

Meanwhile, peel the eggs and halve them.

Place the eggs in the curry and serve with the rice and coriander.
