Egg curry with vadouvan


Curry of eggs, broccoli, coconut milk, cherry tomatoes, coriander, vadouvan with brown rice.

Directions

  1. Bring a pot of water to the boil, add the rice and eggs and cook for 8 minutes.
  2. Remove the eggs from the pan and scare under cold running water.
  3. Drain the rice and leave with the lid on the pan for 5 minutes.
  4. In the meantime cut the broccoli florets in four.
  5. Heat the oil in a stirring stir-fry vadouvan ½ min.
  6. Add the broccoli and stir-fry 1 min.
  7. Add the coconut milk and bring to the boil. Cook over 5 minutes on medium heat.
  8. Halve the tomatoes, add and heat for another 1 minute. Season with salt.
  9. Meanwhile, peel the eggs and halve them.
  10. Place the eggs in the curry and serve with the rice and coriander.
