Preheat the oven to 150 ºC. Remove the meat from the refrigerator and let it reach room temperature.

Meanwhile grind the cinnamon and cloves in a mortar into a powder.

Grate the zest of the mandarin and lemon above the mortar.

Finely chop the rosemary leaves and add to the mortar.

Add a large pinch of pepper and salt to the nutmeg. Cover everything well.

Meanwhile, place the bay leaves in the middle of a roasting pan, lay the meat on it and rub the meat with the mustard.

Sprinkle the spice mixture from the mortar over the meat and push it. Drip olive oil over it.

Fry the meat for about 50 minutes in the oven, or until the meat is nicely pink inside.

Remove the roasting pan from the oven and let it rest for 10 minutes. Cut into slices.
