Falafel waffle with hummus and a green salad


Waffles from falafel with a salad of parsley, spring onion and candy cucumber and lettuce and hummus.

Directions

  1. Slice the parsley, the spring onion in rings and the candy cucumbers into slices. Squeeze out the lemon.
  2. Mix together and season with extra virgin olive oil, 1 tbsp lemon juice (per 2 persons), pepper and salt.
  3. Heat the waffle maker. Divide the falafel dough into 4 equal portions and roll 4 rolls of bread with wet hands.
  4. Grease the waffle iron with the mild olive oil. Divide the dough balls over the hot waffle iron and fry until tender and lightly golden brown in 3-4 minutes.
  5. In the meantime, remove the leaves from the lettuce.
  6. Divide the falafel waffles (2 per person), green salad, leaves of lettuce and the hummus over the plates.
