Directions
-
Preheat the oven to 175 ° C. Melt the butter in a frying pan and fry the onion in glass for 4 minutes. Put in the supplies and crème fraîche and smother the whole in about 8 min. Very softly done.
 -
Puree the pork and veal in the food processor. First use the pulse button so that the whole mixes well. Add the garlic, eggs, brandy, biscuits, 2 tsp salt and pepper to taste. Keep mixing everything until it becomes a smooth mass. Stop the machine and scoop the chicken liver with cream and the ham through it.
 -
Line the mold with slices of bacon and pour the pâté mixture into it. Smooth the top. Put the rest of the bacon on it. Cover the mold with a lid or aluminum foil.
 -
Place a roasting tray on the grid of the oven. Put the mold in the roasting pan and fill it to 2 cm below the edge of the mold with boiling water. Let the pâté be cooked in about 1 1/2 hours.
 -
Remove the mold from the roasting tray and allow the pâté to cool on a rack in the mold. Keep it in the refrigerator until it is used.
 -
Cut the pate into slices. Tasty with blueberry sauce and warm toast.
