Farmhouse cabbage soup from minho
A tasty recipe. The main course contains the following ingredients: meat, onion, garlic, crumbly potatoes (about 450 g), ready-to-cook kale, olive oil, chorizo sausage (in slices of about 1/2 cm) and salt and freshly ground pepper.

Peel and chop onion and garlic.

Peel potatoes, wash and cut into thin slices.

Cut the kale.

Heat 3 tablespoons of oil in a generous (soup) pan and gently fry onion and garlic for about 3 minutes.

Add potato slices and fry them for 3 to 4 minutes.

Add 1 1/4 liters of water and bring to the boil.

Simmer soup on low heat for about 25 minutes until potatoes are very soft.

Take the pan of fire and crush potatoes in soup with puree mash.

Heat residual oil in frying pan and lightly brown slices of sausage.

Mix slices through soup.

Add kale and boil for about 5 minutes.

Season the soup with salt and pepper.

Serve in bowls and serve with firm bread..
