Fry the spring onion, without leaves, in the butter without coloring.

Add the mustard, add the stock and cook gently for 5 minutes.

Puree with a hand blender. Add the cream and cheese and let the cheese melt in the soup while stirring. Season with salt and pepper.

Sprinkle the soup before serving with the chopped leaves of the spring onion.
