Fast tomato soup with tortellini

Mix the tomato sauce and stock in the soup pot and bring to the boil.

Puree the soup if necessary to make it nicely smooth and then add the tortellini. Let boil gently in about 8 minutes.

Check the tortellini for doneness. Turn the heat source off and stir in the basil.

Season the soup to taste with salt and pepper and serve with freshly grated Parmesan cheese.

Tasty with chopped herb bread.
