Preheat the oven to 200ºC.

Melt half of the butter. Brush 4 sheets of filo pastry with the melted butter and fold them in four. Press the dough into the molds and bake the pies in the middle of the oven for about 11 minutes until crispy and golden brown.

Heat the rest of the butter and fry the ham strips for 2 minutes. Scoop the shallot with the chestnut mushrooms and curry through and cook for 3-4 minutes while stirring. Stir in the crème fraîche and season with salt and pepper.

Put the potters on warm plates, scoop the filling in (and what is possibly next to it) and sprinkle with the parsley.
