Preheat the oven to 200ºC.

Halve the sheets of filo pastry in width and brush them with melted butter.

Place some goat cheese, thyme and walnuts at the bottom of each dough sheet and drizzle with honey.

Fold the sides over the filling and roll the dough. Place the rolls on the baking sheet.

Brush the top of the rolls again with melted butter.

Fry the rolls in the middle of the oven in about 20 minutes until crispy and golden brown.

Put a skewer in each roll and serve the rolls in a tall glass so that they stay upright.
