Fish cakes of haddock
A tasty recipe. The main course contains the following ingredients: fish, potatoes, haddock fillet, fresh ginger ((bag 150 g), peeled), lime (cleaned), coriander (chopped), red pepper (chopped), egg (beaten), flour, fish sauce ( bottle 250 ml) and sunflower oil.

Preheat the oven to 180 ° C. Peel the potatoes, cut into quarters and cook until tender for about 10 minutes. Drain and allow to dry in the still hot pan.

Sprinkle the fish fillet with salt and pepper and wrap in aluminum foil. Put about 15 minutes in the oven until the fish is cooked. Meanwhile, grate the ginger and the green skin of the lime. Squeeze out the fruit. Put the ginger in a bowl with the lime zest, coriander and red pepper. Prepare the potatoes with a fork. Cut the fish into pieces and add to the potato mixture.

Add the egg and the flour. Add the fish sauce and 2 tbsp lime juice, but make sure the mixture remains firm enough to form cookies. Add extra flower if necessary. Season with salt and pepper.

Form 8 biscuits of 2 cm thick. Heat a large layer of oil in a frying pan and brown the fish cakes in 6 minutes. Turn halfway. Scoop them out of the pan with a slotted spoon and drain on kitchen paper. Tasty with a green salad and chili sauce.
