Fish curry with cod and coriander

Squeeze out 1 lime and sprinkle the fish with it. Cut the other lime into slices. Put the tomatoes a few seconds in hot water, peel them and cut into cubes.

Heat the oil and fry the onion rings 2-3 minutes. Spoon the garlic, chilli powder, turmeric, ginger powder and half of the coriander.

Sprinkle the fish with salt and place on the onion mixture. Add the fish stock and tomato cubes and simmer for 7-8 minutes.

Sprinkle the fish curry with the rest of the coriander and garnish with the slices of lime.

Delicious with tomato rice (see tip), peas and carrot.
