Directions

  1. Heat the oil and fry the onion for about 5 minutes.
  2. Add the curry paste, sweet pepper and sweet potato and stir-fry briefly.
  3. Pour in the coconut milk, lime juice and rack and bring to the boil slowly.
  4. Place the pieces of fish in the sauce and simmer with the lid on the pan for about 10 minutes.
  5. If necessary, further season with salt and lime juice.
  6. Tasty with stir-fried spinach and white rice.
