French toast of Christmas bread with apricot compote

Grate the orange peel thinly from half the scrubby orange and squeeze the oranges.

Peel the apple and cut into pieces.

Halve the apricots and figs.

Finely chop the bread roll-confit ginger.

Pour the juice in a small pan and add the apple, apricots, figs and ginger.

Bring everything to the boil and cook gently in 10 minutes.

Stir everything into a loose compote and let the compote cool down in a bowl.

Beat in a shallow dish the eggs with milk, sugar and cinnamon.

Put the slices of Christmas bread in them and let them soak for 0.5 minutes.

Heat half the butter in a large frying pan and fry half of the slices of bread in 2 minutes per side until golden brown.

Bake the other slices of Christmas bread in the same way.

Place two slices of baked Christmas bread on each plate and sprinkle some icing sugar over it.

Spoon the apricot compote next to it.
