Pancakes with goat's cheese and cherries

Directions

  1. Separate the eggs and keep the proteins separate.
  2. Beat the egg yolks with the milk and gradually beat the flour and the baking powder into a smooth, thick batter. Cover and rest for 30 minutes.
  3. Cut the vanilla piece in half and scrape out the marrow.
  4. Beat the cheese (or ricotta cheese) with the icing sugar and the marrow of the vanilla pod and squeeze some orange juice. Keep separate.
  5. Put the sugar in a pan and add 2 tbsp water.
  6. Add the cinnamon stick, bring everything to the boil and let it cook slowly until you see more and more bubbles in the syrup.
  7. Halve the cherries, add them and stir them through the syrup.
  8. Turn down the heat and boil for 5 to 10 minutes on low heat, or until the fruit becomes softer and gives some juice.
  9. When you are ready to bake your pancakes, whisk your egg whites with a pinch of salt and gently sprinkle them through the batter.
  10. Put a heavy frying pan with non-stick coating on the fire and add a knob of butter.
  11. Put in a scoop of the batter and fry for a few minutes or until the top shows bubbles and the underside is golden brown.
  12. Turn them over and bake until the other side is golden brown and the pancakes are hot through and through.
  13. Serve them with the cherries (do not forget to remove the cinnamon stick), a generous dollop of the sweetened cheese and some orange zest.
