French toast with pancetta and parmesan

Directions

  1. Beat the eggs with the milk, herbs, cheese, salt and pepper. Put the slices of bread in this egg mixture.
  2. Roast the slices of pancetta in a dry, hot frying pan until crispy. Keep separate.
  3. Heat 1-2 tablespoons of olive oil in a frying pan and fry the soaked slices of bread on medium high in about 2 minutes per side until crispy French toast.
  4. Serve the French toast with the fried pancetta and sprinkle with some parmesan.
