Bring a pot of water to the boil. Split the eggs. Put the egg yolks in a heat-resistant bowl. The proteins are not used.

Stir the sugar through the egg yolks and add the cherry beer. Place the bowl on the pan and ensure that the bottom of the bowl does not touch the water.

Preheat with a bain-marie whisk until a bound sauce is created.

Divide the fruit over the bowls and pour the sabayon over it. Grate the zest of the lemon above it. Serve immediately.
