Put all vegetables and herbs, except the parsley, chives and basil, in a large soup pot. Add 1.5 liters of water, bring briefly to the boil and leave to stand for about 1.5 hours at a low setting.

Strain the stock and season with salt and pepper. Add the fresh herbs and serve immediately.
