Fresh potato salad with smoked salmon
Cook the potatoes with a little salt until done. Drain and let cool.
Halve the cucumber in the length, remove the seeds with a pointed spoon and cut the cucumber into half slices.
Mix the crème fraîche with the mayonnaise, the lemon juice and the capers.
Cut the potatoes into two or celebrate and mix them with the avocado, smoked salmon and cucumber through the crème fraîche mixture.
Spoon the salad into bowls or on plates. Garnish with the spring onions and the mint.
