Boil the eggs for 6 minutes. Scare under cold running water, peel and cut into pieces.

Meanwhile, prepare the taco shells according to the instructions on the package. Cut 1 fennel bulb and 1 fresh sweet apple into thin strips.

Put bean mix in a colander and rinse under cold running water. Slice the leaves of the flat parsley.

Mix the fennel, apple, beans and parsley with the lamb's lettuce and lemon olive oil in a large bowl. Season with pepper and salt.

Saute the Parmesan cheese. Divide the egg tarts and cheese over the salad. Serve the salad in the taco shells.
