Fried beet with rösti and slavink


Baked beet with apple syrup and cumin seeds, served with slavink and home-made rösti.

Directions

  1. Peel the potatoes and grate them coarsely. Put in a sieve and press out the moisture. Grate the onion and mix with the egg and pepper and salt, if necessary, through the potato.
  2. Heat the oil in a frying pan with non-stick coating. Spoon the potato mixture into the pan and press lightly.
  3. Fry the rösti for 10 minutes on low heat. Turn with a plate and bake for another 10 minutes.
  4. In the meantime, heat the oil in another frying pan and bake the croquettes in 15 min. Around brown and done.
  5. Meanwhile cut the beets into slices of ½ inch thick. Heat the oil in a wok. First add the cumin seeds and then the beets and stir-fry 3 min.
  6. Add the apple syrup and stir-fry for another 2 minutes.
  7. Cut the rösti into pieces and spread over the plates, together with the croquettes and the beets.
