Fried rice with avocado and mushrooms

Boil the rice in water with bouillon tablets added. Drain the rice and allow to cool slightly.

Clean the lemon. Grate 1 teaspoon of the peel and press the fruit. Sprinkle the juice over the avocados.

Heat 2 tablespoons of olive oil and fry the mushrooms sprinkled with salt and pepper for 2-3 minutes.

Heat the rest of the oil in a wok or frying pan and fry the onion. Add the rice with lemon zest and stir-fry 2-3 minutes.

Serve the avocado and mushrooms on the rice and sprinkle with the cheese and basil.
