Slice the parsley and squeeze out the lemon.

Heat a frying pan without oil or butter and toast the almonds in 3 min. Golden brown. Scoop in a bowl.

Dab the trout dry with kitchen paper and sprinkle with salt and pepper.

Put the flour in a deep plate. Get the trouts through and shake off the excess flour.

Heat the butter in a large frying pan and, when the foam is gone, put the trout in the pan. Bake on medium heat 8-10 min. Halfway.

Scoop the trout from the pan onto a bowl and sprinkle with the parsley.

Add the lemon juice and the rest of the butter to the remaining shortening and pour it over the trout.

Garnish with the almonds. Bon appétit! .
