Ingredients
Directions
-
Preheat the oven to 140 ° C.
-
Cut the meat into pieces of 2 x 2 cm.
-
Put the meat in a bowl, scoop with the mustard and sprinkle with salt if necessary.
-
Heat the butter in the ovenproof frying pan and fry the meat in parts in 3 min. Golden brown. Remove the shortening with a slotted spoon.
-
Chop the onion. Slice the garlic.
-
Fry the onion and garlic for 3 minutes on low heat in the remaining shortening. Add the flour and fry for 1 min.
-
Add the beer, the beef broth tablet, water, bay leaf and the vinegar and bring it to the boil while stirring. Cook for 3 minutes.
-
Turn off the heat and add the meat. Stir well, put the lid on the pan and simmer for 5 hours in the middle of the oven.
-
Remove the lid from the pan after 4 hours. Stir through and put in the oven for another hour, so that the sauce can thicken and the meat can continue cooking.
-
Remove the bay leaf. Season the stove with salt and pepper.
-
Pull the meat with two forks into loose threads.
-
Heat the fat in the fryer to 175 ° C and fry the French fries in 2 parts in 4 min. Golden brown.
-
Serve the chips with the stew.
