Directions

  2. Cut the meat into pieces of 2 x 2 cm.
  3. Put the meat in a bowl, scoop with the mustard and sprinkle with salt if necessary.
  4. Heat the butter in the ovenproof frying pan and fry the meat in parts in 3 min. Golden brown. Remove the shortening with a slotted spoon.
  5. Chop the onion. Slice the garlic.
  6. Fry the onion and garlic for 3 minutes on low heat in the remaining shortening. Add the flour and fry for 1 min.
  7. Add the beer, the beef broth tablet, water, bay leaf and the vinegar and bring it to the boil while stirring. Cook for 3 minutes.
  8. Turn off the heat and add the meat. Stir well, put the lid on the pan and simmer for 5 hours in the middle of the oven.
  9. Remove the lid from the pan after 4 hours. Stir through and put in the oven for another hour, so that the sauce can thicken and the meat can continue cooking.
  10. Remove the bay leaf. Season the stove with salt and pepper.
  11. Pull the meat with two forks into loose threads.
  12. Heat the fat in the fryer to 175 ° C and fry the French fries in 2 parts in 4 min. Golden brown.
  13. Serve the chips with the stew.
