Directions

  1. Halve the nectarines, apricots and prunes and remove the seeds.
  2. Cut the nectarine, apricot and plum halves into two. Pitted the cherries. Put all the fruits in a bowl.
  3. Cut the yellow skin of the freshly scented lemon into wafer-thin strips.
  4. Put the lemon zest, wine, sugar and the cinnamon stick in a saucepan and bring to a boil.
  5. Remove from the heat when the sugar is dissolved and pour over the fruit. Allow to cool for 30 minutes.
  6. Slice the leaves of the fresh mint and mix through the salad. Serve immediately.
