Directions

  1. Put the rice with the water in a pan. Bring to boil. Turn down the heat, put the lid on the pan. Let it simmer for 20 minutes. Stir occasionally.
  2. Clean the lemon. Grate the yellow skin of the lemon and squeeze out the fruit.
  3. Remove the rice from the heat, scoop in a large bowl and stir in 1 tbsp lemon juice, the lemon zest and the ginger syrup.
  4. Allow to cool for 1 hour. Stir occasionally.
  5. Peel the mango and kiwi and cut thin slices. Cut the banana into slanted slices and drizzle with lemon juice from the bottle.
  6. Cut the colored soy sheets lengthwise in 3 bars. Cut half of the bars in half again in half.
  7. Form the rice with wet hands oval shapes of about 3 by 6 cm. Divide the rice cakes into three parts.
  8. Wrap around a wide strip of colored soy sauce around part of the molds and a narrow bar around the middle.
  9. Dip the ends of the rest of the rice molds into the sesame seeds.
  10. Garnish the sushi with the fruit. Cut the slices if necessary, so that they fit well on the sushi.
