Peel the apples, cut them each into 4 pieces and remove the core. Then cut the 4 pieces into wedges.

Beat a dressing of the lemon juice, the crème fraîche and season with salt and pepper. Scoop the apple here.

Remove the skin from the melon and cut the fruit into half parts. Cut the chicken into thin slices.

Put the arugula on a plate, divide the apple, the slices of chicken and the pieces of melon.
