  1. Mix the pancake mix with the milk and 1 egg. Use 2 large frying pans with non-stick coating to work quickly. Heat 2 lumps of butter. Bake in each pan 1 thin pancake (galette) in 3 min. Turn halfway. Bake 6 more. Heat 25 g butter in one of the two frying pans and fry the mushrooms for 4 min. On high heat. Season with salt and pepper. Take out of the pan.
  2. Preheat the oven to 100 ° C. Heat the rest of the butter in a frying pan and fry 4 fried eggs. Put 1 galette back in a frying pan over low heat and place 1 slice of ham in the middle. Sprinkle with some cheese, top with tomato slices and add some mushrooms. Put 1 egg on it and fold the galette on 4 sides.
