Garden pea bavarois
A tasty Dutch recipe. The main course contains the following ingredients: fish, white bread (de-crusted), almonds (peeled), butter (melted), garden peas (fresh), crème fraîche (light (a 125 ml)), white gelatin, Dutch shrimps (100 g), fresh chives (25 g) and finely chopped).

Toast the bread in the toaster.

Roast the almonds in a dry frying pan and chop them coarsely.

Grind the bread with the almonds in the food processor.

Put the mixture in a bowl and stir in the butter.

Spread the mixture over the baking paper covered with parchment paper and press firmly.

Cook the garden peas in a layer of water with salt in 2 minutes.

Drain the peas and mash them in the food processor.
-
Allow to cool down and stir in the crème fraîche.

Season with salt and pepper.

Soak the gelatine in cold water for 5 minutes, squeeze the sheets and dissolve in 2 tablespoons of hot water.

Stir this together with the shrimp and the chives through the garden pea mixture.

Keep some prawns and chives behind to garnish.

Spoon the bavarois on the cake base, smooth and leave to stiffen in the refrigerator for at least 2 hours.

Garnish with the shrimps and chives left behind..
