Grind the almonds in the food processor.

Mix the ground almonds in a bowl with the flour, baking powder, a pinch of salt, gingerbread, orange peel and lemon peel.

In a mash bowl, beat the egg and sugar in 5 minutes to a thick creamy mass and whisk in the honey and milk.

Then mix in the flour mixture until it becomes a dough.

Leave the dough covered with plastic wrap in the refrigerator for at least 1 hour.

Roll out the dough on a floured surface to a piece of 0.75 cm thick and use the protruding molds to cut out cookies.

Roll out the leftover dough again and cut out cookies again.
