Preheat the oven to 160ºC.

Mix the flour with the ginger powder, sugar and a pinch of salt.

In a food processor or with the dough hooks of a mixer, mix the butter and ginger syrup into a firm dough.

Express the dough on the work surface into a roll and wrap it in foil. Let sit in the refrigerator for about 15 minutes.

Cut the roll into 10 equal pieces and roll balls of it.

Press a hole in each ball with your thumb and place them on the baking tray with the hole upwards.

Beat the egg yolk with a few drops of water and brush the cookies.

Divide the shreds and fry the biscuits in the middle of the oven for 15-20 minutes until tender and golden brown.

Let the ginger cookies cool slightly on a grid.
