Preheat the oven to 175 ° C.

Clean the orange. Grate the orange zest of the orange. In a bowl, mix the almond flour, sugar, 1 tsp orange zest and the salt.

Split the egg and store the egg yolk. The protein is not used. Mix the butter and egg yolk into the flour mixture and knead into a cohesive dough.

Wrap the dough in cling film and let it rest in the refrigerator for 30 minutes.

Roll the dough between two sheets of baking paper with the rolling pin to a piece of ½ cm thick.

Knead the leftover dough into a ball and put it back in the fridge wrapped in foil.

Place the letter biscuits on a griddle covered with parchment paper and bake until golden brown in about 12 minutes.
