Goat cheese mouse with olive and orange
Amuse of goat cheese, pistachio nuts, orange and olive. Ideal for a summer dinner.

Roast the pistachios for 2-3 minutes in a dry frying pan over medium heat. Let them cool and chop them. Place an olive on each spoon. Grate the peel of the orange. Mix the goat's cheese with orange zest, salt and pepper.

Divide the goat's cheese into four portions and knead with a cool wet hand a ball of around the olive. Roll the goat's cheese through the pieces of pistachio and sprinkle the bread with (freshly ground) pepper to taste.
