Directions

  1. Remove the carrots and sprouts from the radishes. Cut the radishes 8 times from the bottom so that petals are formed. Put the radishes in ice cold water with a little salt.
  2. Roast the hazelnuts in a dry, hot frying pan. Divide the radicchio over 2 plates.
  3. Peel strings of the orange peel and press the orange. Mix the juice with olive oil, sherry or wine, honey and some freshly ground pepper. Sprinkle half of the dressing over the lettuce.
  4. Roast the goat's cheese under a hot oven grill or bake the slices briefly on both sides in a little olive oil. Put the cheese on the salad.
  5. Sprinkle with hazelnuts and garnish with watermelon, florets of parma ham, orange peel and radish flowers. Sprinkle the rest of the dressing over it.
