Directions

  1. Preheat the oven to 180 ° C. Place the gordita's on a baking sheet covered with parchment paper. Drizzle with oil and sprinkle with salt if necessary.
  2. Fry the gordita's in the oven for about 8 minutes.
  3. Wash the lime clean and halve. Grate the green skin of one half and squeeze out that half. Cut the other half into pieces.
  4. Put the lime zest together with ½ tbsp lime juice (for 2 persons) in a saucepan and add the kidney beans (no drain).
  5. Heat the beans while stirring and season to taste with pepper and salt.
  6. Heat the oil in a frying pan and fry the eggs.
  7. Divide the kidney beans, salsa and raw vegetables over the gordita's and spread the fried eggs over it. Serve the lime parts.
