Bring water to a boil in a high pan of salt. Wash the cauliflower and place it upside down in the boiling water.

Cook the cauliflower with the lid on the pan for about 15 minutes until al dente.

Preheat the oven grill.

Scrape the cheese into slices. Drain the cauliflower in a colander. Grease the oven dish.

Place the cauliflower with the stalk down in the oven dish.

Cover the cauliflower with slices of cheese. Place the baking dish under the grill for 5-10 minutes and let the cheese melt and color. Serve immediately.
