Steam the mussels open and let them cool. Remove the empty shells and place the stuffed shells on a baking tray.

Heat the oil and fry the shallot in a low setting for about 4 minutes. Add the bacon and cook for a few minutes. Extinguish with the wine and cook for 1 minute. Spoon into a bowl and mix in the parsley. Season with pepper.

Roast the bread dry, but not brown and crumble it.

Spread the bacon mixture with adherent moisture over the mussels and sprinkle with the bread crumbs.

Heat the oven grill and grate the mussels just as light brown before serving.
