Gratinated zucchini with lemon schnitzel

Place the zucchini slices on the baking sheet. Sprinkle with Parmesan cheese and pepper and drizzle with 2 tablespoons of olive oil.

Halve the cutlets or cut into broad strips. Grate the peel of 1 lemon and squeeze out the lemon. Cut the other lemon into parts.

Heat the oven grill. Place the courgettes a little above the center of the oven and cook for 4-5 minutes.

Divide the rest of the olive oil over 2 frying pans. Fry the meat in one pan for about 3 minutes per side and stir-fry in the other pan de rösti.

Take the meat out of the pan. Add the lemon juice, 4 tablespoons of water, lemon zest, honey, salt and pepper to the shortening.

Serve the schnitzels with the lemon jus, zucchini and rösti. Garnish with the olives and lemon wedges.
