Great vegetables
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: green cabbage (white cabbage or 500 g sliced kale), red cabbage, olive oil, spinach, lemon and extra virgin olive oil.

Remove the less beautiful outer leaves of the green or white and the red cabbage and discard them. Cut the outside of the coals into strips. Cut the middle of the coal into pieces, cut the hard end and divide the parts into loose leaves.

Bring 2 pans with water and a little salt to the boil and put the green, white or kale in one pan and the red cabbage in the other. Boil the green or white cabbage for 4 minutes or the kale for 2-3 minutes and the red cabbage for 5 minutes. Drain the coals and steam dry on a clean tea towel.

Put a large frying pan on high heat with a splash of olive oil. Add the coals and the spinach, if it is too much, put it in 2 portions, and let the spinach shrink in a minute or two. Shake or shovel regularly.

Squeeze the juice of 1/2 a lemon and add a generous amount of extra virgin olive oil and salt and pepper. Shake everything for a moment. Taste and add some lemon juice to taste, shake again and serve immediately.
