Greek eggplant dish with goat's cheese
A nice Greek recipe. The vegetarian main course contains the following ingredients: rice, onion and traditional olive oil.

Boil the rice according to the instructions on the package. Cut the onions and cut the aubergines into cubes.

Heat the oil in a frying pan and fry the onion and aubergines for 3 minutes. Scoop the herbs through and add the tomatoes. Keep at least 10 minutes against the boil.

Cut the cheese into pieces and scoop the aubergine dish just before serving. Serve with the rice.
