Greek eggplant dish with goat's cheese

Boil the rice according to the instructions on the package. Cut the onions and cut the aubergines into cubes.

Heat the oil in a frying pan and fry the onion and aubergines for 3 minutes. Scoop the herbs through and add the tomatoes. Keep at least 10 minutes against the boil.
