Greek filo pastry with spinach, white cheese and spicy cheese.

Sprinkle the filo pastry and spinach and cover the filo pastry with a damp tea towel to prevent dehydration.

Crumble the white cheese. Squeeze as much moisture from the spinach as possible. Slice the spinach.

Scoop the cheese crumbs, egg, nutmeg and grated cheese through. Season with (freshly ground) salt and pepper.

Beat the egg. Fold the sheets of filo pastry double and brush them with the beaten egg.

Place a level tablespoon of the spinach mixture at the bottom of the sheets.

Fold the upper right corner to the left bottom corner and fold the points two more times until they are well filled triangles.
