Sprinkle the filo pastry and spinach and cover the filo pastry with a damp tea towel to prevent dehydration.

Crumble the white cheese. Squeeze as much moisture from the spinach as possible. Slice the spinach.

Scoop the cheese crumbs, egg, nutmeg and grated cheese through. Season with (freshly ground) salt and pepper.
