Halve the cucumber in the length and scrape out the seeds with a teaspoon.

Grate the cucumber coarsely, sprinkle with a pinch of salt and leave to drain for 5 minutes in a colander.

Dab the cucumber dry and scoop with the oil and yogurt. Press the garlic above it. Season with the mint, lemon juice, pepper and salt.
