Green asparagus tips with ham and quail egg
A tasty recipe. The lunch contains the following ingredients: meat, green asparagus tips (100 g), salt, quail eggs, Ardennes ham (approx. 40 g), gorgonzola (cheese), crème fraîche and basil.

Cut hard tips from asparagus tips.

Cook in a saucepan with plenty of boiling water and salt asparagus tips in approx.

3 to 4 minutes.

Quail eggs boil in about 3 to 4 minutes.

Meanwhile, crispy brown slices of ham in dry frying pan.

Melt gorgonzola with crème fraîche in the saucepan.
-
Slightly drain asparagus tips into sieve.
-
Peel and halve quail eggs.
-
Place slices of ham in the middle of two plates.
-
Place asparagus with dots on one side.
-
Gorgonzola on top and garnish with quail eggs.

Cut the basil into strips and sprinkle over it.

Serve with mini-croissants..
