Green beans with vinaigrette and mint

Cook the beans in green for about 10 minutes and al dente in water with salt.

In the meantime, before the vinaigrette, beat the mustard with the vinegar and honey and pour the olive oil in a stream while beating until smooth vinaigrette. Season with salt and pepper.

Drain the beans in a colander and rinse briefly under cold water. Drain. Mix the warm beans with the onion and fresh mint in a large bowl and pour the vinaigrette through. Serve immediately.
