Green-mango salad with shrimps

Scrape or cut the mango into thin strips and mix it with the fish sauce, lime juice and red pepper. Keep the small leaves of the green herbs to garnish. Finely chop the rest of the herbs and add to the mango.

Heat the oil and fry the shrimp. Arrange the mango salad on 4 plates in the shape of a bird's nest.

Place the shrimps on the edge of the litters and distribute the peanuts and onions. Garnish with the remaining herbs and serve immediately.
