Directions

  1. Spread the lamb's lettuce over a flat dish.
  2. Cut the cucumber lengthwise into quarters, remove the seeds with a teaspoon and cut the cucumber into small cubes.
  3. Put the cubes together on the lamb's lettuce.
  4. Halve the bell pepper, remove the stalk and seedlings and cut the bell pepper into small cubes. Place next to the cucumber.
  5. Cut the spring onions into rings and place them next to the peppers. Put the soy beans again in addition.
  6. Cut the avocado half in half. Remove the kernel, scoop out the flesh with a spoon and cut into small cubes.
  7. Place half of the avocado cubes next to the soy beans. Put the rest of the avocado with the goat's cheese and the water in a tall cup.
  8. Clean the lime. Grate the green skin above the avocado. Squeeze out the fruit and add 2 tbsp juice.
  9. Puree with the hand blender into a thick dressing. Season with pepper and salt.
  10. Sprinkle the salad with half of the dressing. Cut the coriander roughly and sprinkle over it. Serve the rest of the dressing and the bread separately.
